Directions to Use:
Mix: Take the required quantity of mix in a bowl. Add water (and a spoonful of curd if desired) to make a smooth, pouring-consistency batter.
Rest: Let the batter rest for 10-15 minutes to allow the coarse red rice grains to soften.
Pour: Heat a tawa or cast-iron griddle. Pour a ladle of batter and spread it into a thin circle.
Cook: Drizzle a teaspoon of oil or ghee around the edges. Cook until the bottom turns a rich reddish-brown and crispy.
Serve: Serve hot with Coconut Chutney, spicy Kara Chutney, or Sambar.
